Connection to PostgreSQL goes through 172.17.0.1 instead of localhost which I should have known but it took half an hour to find out again...
Mounting a volume for PostgreSQL data does not work on this laptop. I keep getting fatal error messages. Check whether this does work on the desktop PC. Alternatively uninstall Rancher and try again with the official Docker setup.
With docker.io Postgres just starts and data is created on the mounted volume. Ready to continue. This is fixed.
Uninstalled Rancher Desktop and installed Docker using instructions found at shape.host
Ran into an issue which was solved by a typo in ~/.docker.config.json as found in this StackOverflow issue

The files belonging to this database system will be owned by user "bart".
This user must also own the server process.
The database cluster will be initialized with locale "en_US.utf8".
The default database encoding has accordingly been set to "UTF8".
The default text search configuration will be set to "english".
Data page checksums are disabled.
